In Korean cuisine, these greyish clear noodles are used to make stir fried noodles like Japchae (Korean Stir-Fried Sweet Potato Noodles), noodle soups like beef short rib soups, hot pots and noodle salads. Japchae is a Korean noodle dish that includes tender beef, carrots, spinach, onions, and egg. There are variations, of course, some being without meat, but the core ingredient is the sweet potato noodles. Look at all the noodles wannabes out in the market now, made from zucchini, butternut squash…people want their noodles! A beloved Korean favorite, this glass noodle salad was served at the 2006 UN Korean Food Festival. You can serve these noodles at room temperature or slightly chilled.
